Huevos Rancheros

Eating 75g protein a day is proving to be challenging - that's like the equivalent of 10 eggs! Huevo Rancheros is a tasty, tasty godsend with the double dose in the form of beans and eggs. Whip up a few tortillas (running low on mix though, yikes), pop open a can of beans, fry a couple eggs and top with salsa. Today we mixed it up a bit with hot green salsa.

1/3 of protein intake down, 2 more protein-packed meals to go. Whee.

Hi Emily,
Oddly enough, I also live in Central Square (well, between Central and Inman) and I have a blog of almost the same name and subject matter, except you are a pregnant lady and I am a random dude. I'd never seen your blog before today, I swear. It is much prettier than mine. Just thought I should say hi and exclaim how strange this all is.

Wow, there's almost enough of us to be a Central Square food blogger community. Although I am sadly lacking in posts lately.

I do not live in Central sq (as you know) but I do love your many blogs (and apparently am going to comment in all of them today). You may not be interested since you're having organic fruits and veggies delivered, but I'm always looking for buddies to go with me to Haymarket to buy produce there. If you're ever bored on a Friday (after 5) or Saturday and want to go with me, let me know.
Also, my current favorite dinner of the moment is a fritata with cheese and broccoli. Similar to huevos rancheros I know, but slightly different. I actually just bought a jar of salsa to try to add to it, so we'll see. :)

So somehow my comment posted before I signed my name. But it was me that wrote that last comment about haymarket :)
